Fish Friday just got a whole lot batter for thousands of service men and women

After nine years spent in the Navy, Calum Richardson knows the importance of a well-fed force. And with a decade of practice serving up award-wining fish suppers, he’s now marrying these two experience to good effect.

One of the secrets to the popularity of The Bay Fish & Chips is the batter that wraps the sustainably caught fish. It’s not only helped keep the customers queuing out of the door in his hometown, but also saw visitors to two of Japan’s largest department stores flock to his pop-up two years running. Then of course there was the Fish and Chip Shop of the Year award and the small matter of a couple of Food Made Good Awards along the way.

Premium Bay Batter has been a key ingredient of The Bay’s success and now thousands more will be able to enjoy the experience. For the last year offshore workers in the North Sea have been tucking into the golden coating.  Never one to stand still, Calum is biting off a much larger chunk of the market. He’s linked up with ESS Support Services Worldwide, part of the Compass Group UK, and now restaurants and military messes across the whole defence sector will be using the batter for their famous weekly Fish Fridays.

Calum says: “I’m absolutely delighted to be in a growing partnership with Compass Group for the distribution of our bespoke batter. The new contracts come at an amazing point for the business as we’ve just celebrated our 10th birthday. I spent nine years working in the Navy and ever since I left to pursue my dream of working with food it has always been a personal achievement of mine to be able to work with Compass Group and give something back to the on and offshore sectors.”

Well, wait for it…It only contains three ingredients and you’ve almost certainly got them in your kitchen. They are, flour, raising agent and salt. Yep, nothing more, nothing less. Well, you wouldn’t expect one of the UK’s most sustainable restaurants to mess around with additives and any other nasties would you? The key is in the proportions and so it’s been created with a flow-cup system to ensure consistency, whilst guaranteeing portion control and reducing waste.
