We are proud to incorporate flavours from each region of Mexico across many of our dishes. We believe we can create fantastic food and drink – all whilst still taking care of our planet. In fact, we work hard to ensure we’re always putting the environment and people before anything else; we want to leave the planet in a better place than we found it and look out for one another along the way. Over the last couple of years, we have increased our veg-led options across our menu by introducing jackfruit and banana blossom across our starters and mains! We source MSC-certified fish rated 3 or below and for farmed fish and seafood we source minimum global gap or BAP 2*. Supporting global farmers is important to us, which is why we only use premium quality organic blend coffee from Mexico across our drink’s menu. We introduced the Toucan cleaning system across our sites in 2021, toucan lets you make your own multi-surface disinfectant cleaner from just water, salt and electricity – replacing the need for multiple cleaning chemicals and single use plastic bottles. We are a founding member of Hospitality Zero Carbon Forum and co-chairing working group, moving to measure and report on Scope 3 emissions, and developing roadmap to net zero.
