Top marks for university training programme

Dozens of university catering staff have now completed an SRA Sustainability Training programme, delivered in partnership with the TUCO Academy, and the feedback has been overwhelmingly positive.

The first round of foodservice sustainability training saw us host sessions at St. Johns College, Cambridge, University of York, Manchester Metropolitan University and University South Wales.

The training focused on priority areas for universities which were; ethical meat and dairy, environmentally positive farming and local and seasonal in sourcing; healthy eating and community engagement in society; waste management and supply chain in environment.

To encourage debate and discussion all of the sessions were highly interactive, with group exercises focusing on challenges such as planning a sustainable and affordable menu and communicating sustainability initiatives to customers.

The written feedback we’ve received from participants, who included chefs, catering managers and procurement staff, reflect this. Many people said that a new sustainable approach to menu-planning and finding fresh inspiring ways to communicate their sustainability messages to students were among the practical applications they’d using with their new found knowledge.

The representatives from 18 different organisations including: Cardiff, Liverpool Hope, Lancaster and Hull also said the training would assist them as they progressed towards their Food Made Good sustainability rating.

The next round of training sessions, all of which are half-day and start at 9.30am, begins at the end of this month. See below for full details of the upcoming programme of events.
