In October 2018 Lussmanns Fish & Grill’s long-term commitment to sourcing and serving an ever-increasing variety and quantity of sustainable seafood was rewarded with the Source Fish Responsibly award at the Food Made Good Awards.
If it isn’t from plentiful stocks, there’s a minnow’s chance of a fishy making it onto the dishy at any of these five Hertfordshire restaurants. Marine Stewardship Council (MSC) certified species rule the waves at Lussmanns.
Founder Andrei Lussmann says: “We have spent the past 5 years building an in-depth strategy to ensure that we are serving customers a growing variety of MSC certified dishes. We have shown that diners can fall in love with different species and that it is possible to promote the importance of MSC certification to a high street audience.”
At that stage diners could enjoy ten different seafood dishes created from eight species – 90% of which were MSC certified. Cod cheeks, mackerel, crab, hake and bream are just some of the varieties on the menu.
Now, in 2019, Andrei has gone on to fulfil his dream of becoming the first restaurant group with a 100% MSC certified menu – adding monkfish and ling to the long list of sustainable seafood dishes.
“It’s has always been a personal mission to have a 100% MSC fish menu by 2019. I’ve been edging ever closer with each year being 90% in 2018 with the remaining being Marine Conservation Society considered, I’m delighted that we can now offer this to our customers and spreading the sustainable word the Lussmanns way. I’m helping diners sample a smorgasbord of seafood while ensuring there are plenty more fish left in the sea.”
